BLENDER LEMON PIE: MY OH MY




Question: What do you get when you drop a whole lemon, a cup and half of sugar, a stick of butter, several eggs, and a little vanilla into a blender?
Answer: lemon pie.



This, my overscheduled, overstressed, cooking-challenged friends, is homemade pie for the people.  Anybody can make this.  It is mindless….just don’t eat it that way.  Top it with fresh blueberries.  Take very small bites.  Savor……it is summery sweet and a tinge tart.  Eat it slow.  While you are eating it, think about how remarkable it is that your homemade confection came from just a few ingredients and very little effort.


1 large lemon, cut into 8 pieces, seeds removed
1 1/2 cups superfine sugar
1 stick salted sweet cream butter
1 tsp vanilla
4 eggs
1 pie shell, storebought or homemade sweet pastry dough


1.  PREP:  Preheat oven to 350
2. BLEND:  Place all ingredients except your pie shell in a blender.  Blend on HIGH until smooth.  Pour into the pie shell.
3. BAKE:  BAke until top is golden and center is set, about 40-45 minutes.  (Keep watch over it so it doesn’t burn.)  Serve topped with fresh blueberries and/or whipped cream.

    This sounds really easy so I feel dumb asking. Do I bake the pie shell before putting in filling? And by whole lemon, do you mean peel and all?
